D. I. Kitchen: The Joy of Cooking.

No matter how much fast food I eat, I can only be satisfied with the taste of home cooked meals. In earlier articles, I introduced you to some of the best cuisines, but now I have something different in store for you.

I'd like to introduce you to D. I. Kichen in today's blog. Not only is the cuisine here delicious, but the proprietor, Mr. Satpal Singh Sethi, is an inspiration. During Covid period, he decided to pursue his passion for cooking and established this cloud kitchen on November 13, 2021. This cloud kitchen is located in Sher-E-Punjab colony, Andheri East.
 

They prepare fresh cuisine as orders come in. D.I.Kitchen serves a wide range of dishes, including vegetarian and non-vegetarian gravies, parathas, and meals.  They provide a menu with foods designed specifically for diabetics.
I can't decide which of their dishes is my favourites, but I would definitely recommend their chhole. Chole has a robust and hearty flavor profile. The chickpeas provide a nutty and earthy taste, while the tomato-based gravy adds a tangy and slightly sweet element. The blend of spices, such as cumin, coriander, and garam masala, infuses the dish with warm and aromatic notes. Additionally, the use of garlic and ginger enhances the overall savory taste. The combination of these ingredients creates a harmonious balance of flavors, making chole a delicious and satisfying dish.


Another dish, suggested by Mr. Sethi himself was Malai chicken, an Afghani delicacy brought by the Sikh community after partition. Malai chicken is a rich and creamy Indian dish with a mild and slightly tangy taste. The chicken is marinated in a mixture of yogurt, cream, and spices, giving it a velvety texture and a luscious flavor. The addition of garlic, ginger, and aromatic spices adds depth and warmth to the dish. When cooked, the chicken develops a subtle smoky and charred flavor, creating a delightful combination of creamy, savory, and mildly spiced notes. It is a popular and indulgent choice in Indian cuisine.

Mr. Sethi intends to open a modest eatery shortly. Let's hope we can enjoy his tempting food while having a chat with our buddies.
